CUTE RED, WHITE AND BLUE BABY POTATOES FOR THE 4TH!
These darling colorful baby potatoes are the perfect addition to a 4th of July “Real Food Meal.”
To keep them healthy, I prefer mashed, baked, steamed or roasted potatoes. If prepared properly, potatoes are an exceptionally healthful low-calorie, high fiber food. There are lots of ways to make them taste wonderful, but sorry, no French fries! Unless they’re oven fried!
My plans are to steam them and make a potato salad. You can either serve the salad as a side or add some rotisserie chicken to the salad to make it a main course. Even as a side, I always serve it with protein to help balance the carbs.
My tip for making traditional potato salad a little healthier is to use plain Greek yogurt and Dijon mustard in place of half or all of the mayo. Also, add LOTS of celery and pickles and any other crunchy veggies you like.
When prepared in a healthy manner, potatoes can be a great addition to your eating plan. They provide a variety of vitamins and minerals, especially Vitamin B6.
