Cream Cheese Swirl Banana Bread with Walnuts

CREAM CHEESE SWIRL BANANA BREAD WITH WALNUTS!

Who doesn’t love good old-fashioned banana bread? I’ve always loved it, but I decided to take it to another level by adding a luscious cheesecake swirl.

Then it’s topped with some healthy crunchy walnuts that go perfectly with the nutritious bananas, white whole-wheat flour and local honey.

Using natural sugar from the ripe bananas and the honey as the only sweeteners in this recipe eliminates the usual amount of refined sugar and that makes it a guilt-free dessert for me.

THE GUILT-FREE REAL FOOD INGREDIENTS!

First, pre-heat your oven to 350° F and lightly oil a 9 by 5 inch loaf pan. Then, in a medium bowl, add flour, baking powder, baking soda and salt and whisk them together.

In a second bowl, add one egg, a little honey, some vanilla and oil. Whisk together until everything is thoroughly combined. I warm the honey slightly, so it’s thin enough to mix well.

Next, using a fork, mash two ripe bananas completely and whisk them into the egg mixture.

To prepare the cream cheese swirl, in a third bowl, add a package of soft cream cheese, one egg, some yogurt, honey and vanilla. Using a hand mixer, whip the filling until creamy.

After that, chop raw walnuts into small pieces and set aside.

Note: Unbleached White Whole Wheat Flour is milled from hard white spring wheat rather than the traditional red wheat of regular Whole Wheat Flour. With its lighter color, milder flavor and finer texture, it is a great substitute for all-purpose flour. It gives you all of the nutrition and fiber of whole grains, in a lighter, milder-tasting flour.

To prepare the batter, add the egg and banana mixture to the flour mixture and whisk them all together until just combined.

Pour two-thirds of the bread batter into the bottom of the loaf pan. Then pour the cream cheese mixture into the pan and spread it evenly. Top with the remaining batter.

Using a butter knife, drag it through the batter in a swirling motion the entire length of the loaf pan. Last, sprinkle the chopped walnuts over the batter.

On the middle rack of your oven, bake the bread for 50 to 55 minutes until it feels slightly firm. A cake tester may not work accurately in this case, since the cream cheese swirl will be soft, but give it a try anyway.

Remove the banana bread from the oven and let it cool in the pan for 15 minutes. Then move it to a plate or a rack.

Once the bread is cooled, slice and serve. It can be served plain or with whipped heavy cream or with whipped coconut milk/cream. Enjoy!

Bananas are a very rich source of potassium, which is important for helping control heart rate and blood pressure. So enjoy a banana anytime!
