TIP: Monday Rotisserie Chicken a Quick and Nutritious Meal

SIMPLE AND HEALTHY AND ECONOMICAL ROTISSERIE CHICKEN REAL FOOD MEAL! WHAT COULD BE EASIER!!

On Mondays, the Whole Foods Market in our neighborhood sells their rotisserie chickens at a discount. The good quality poultry and choice of different seasonings makes this a stress-free tasty healthy meal. Sometimes I feel like eating healthy can be very time-consuming, so I’ll take a little help whenever I can get it. I like to remove the meat from the entire chicken and use the leftovers for a couple of other meals during the week.

Just add some fresh organic asparagus with lemon, a good quality artisan multi-grain bread (this one is from Trader Joe’s) and fresh organic strawberries with a little honey and coconut cream for dessert.

Chop the asparagus into bite-sized pieces and season with pepper and lemon, then quickly sauté in a teaspoon of olive oil. Next garnish with a few leaves of tasty fresh basil.

Last, chop the strawberries, add some to a small bowl and drizzle with a little honey and top with a dollop of whipped coconut cream.
