Individual Chicken Sausage and Olive Tortilla Pizzas

PERSONAL-SIZED MILD ITALIAN CHICKEN SAUSAGE AND WHOLE WHEAT TORTILLA PIZZAS WITH OLIVES!

A lot of times, I feel like pizza is all crust. These whole wheat tortillas serve as the perfect healthy, light foundation and can be kept on hand to create this quick and easy pizza recipe anytime the desire hits.

 The chicken sausage we get has the best flavor, with just the right amount of heat and is perfect for this Real Food Meal. My husband loves to make these. 

THE REAL FOOD PIZZA INGREDIENTS 

Start by pouring your favorite marina sauce into a pan and adding some chicken sausage. I keep a selection of ingredients in my freezer pantry for quick Real Food Meal preparation and chicken sausage is one of them. If your sausage needs cooking, crumble and cook it in the pan before adding the marina sauce.

Then slice the olives and add them to the pan. Cook the mixture until some of the liquid evaporates and the sauce thickens.

Heat your oven and when it’s ready, pre-cook 2 tortilla’s on your pizza pan, just enough to crisp them up a little. With a spoon scoop out a quarter of the pizza mixture and spread it on one of the tortillas. I cook 2 of the pizzas at a time, so prepare the second one the same as the first.


Next add the shredded cheese. First sprinkle a light layer of the mozzarella cheese, second the Monterey Jack and then a really light sprinkle of the cheddar cheese. Follow with a sprinkle of the Italian seasoning. Then cook long enough for the cheese to melt. Last, add fresh sliced tomatoes if you like them on your pizza.

Notes: Be sure the shredded cheeses are the best quality you can get. I am amazed at the additives that are in shredded cheese sometimes!! For as long as I have been checking ingredients, I still occasionally forget and assume that the product I am buying is what we would expect it to be and am shocked when it’s not.

It may look like I favor Whole Foods 365 products, but it just so happens they have some of the best ingredients at a reasonable price and that works for my budget. Besides that, I don’t drive and fortunately for me there is a Whole Foods Market within walking distance of my home.

I have read that eating tomato-based products, such as marina or pizza sauce, has been associated with cardiovascular health benefits, as well as providing protection against high blood pressure, high cholesterol, strokes and heart disease.

Individual Chicken Sausage and Olive Tortilla Pizzas

    Prep Time: 15 Minutes     Cook Time: 25 Minutes     Yield: 4 Servings


    Ingredients

    • 2 Cups Marina Sauce (I Used Organic Portobello Mushroom Pasta Sauce This Time)
    • 4 Whole Wheat Tortilla’s (Look for the Tortillas that Need Refrigerating – The Shelf Stable Variety Usually have Additives to Avoid – Mine are 365 Organic Whole Wheat Tortillas)
    • 8 oz. of Mild Italian Chicken Sausage (Cook a Batch of Sausage Ahead of Time and Keep it Handy in the Freezer – Check the Ingredients of the Sausage for Unwanted Additives)
    • 1 Teaspoon Organic Italian Seasoning
    • 1/4 Cup Shredded Mozzarella (For Melting)
    • 1/4 Cup Shredded Monterey Jack (For Creaminess)
    • 1/4 Cup Shredded Sharp Cheddar (For Extra Flavor)
    • 1/2 Cup Pitted Black Olives (Ferrous Gluconate Free if You Can Get Them)

    Preparation

    2. Then slice the olives and add them to the mixture.
    3. Cook the mixture until some of the liquid evaporates and the sauce thickens.
    4. Pre-heat your oven to 400 degrees. When the oven is ready, pre-cook 2 tortillas for 8-10 minutes on your pizza pan, just enough to crisp them up a little.
    5. With a spoon scoop out a quarter of the pizza mixture and spread it on one of the tortillas. I cook 2 of the pizzas at a time, so prepare the second one the same as the first.
    6. Next add the shredded cheese. First sprinkle a light layer of the mozzarella cheese, second the Monterey Jack and then a really light sprinkle of the cheddar cheese.  Follow with a sprinkle of the Italian seasoning.
    7. Cook long enough for the cheese to melt, about 12 – 15 minutes.
    8. Add fresh sliced tomatoes if you like them on your pizza.
